Oat Milk

Oat milk has a pleasant, slightly sweet taste and a milky consistently. Oat milk is commercially available or you can easily make your own at home.

One of the advantages of oats over other grains is that it is the only grain to contain high levels of protein similar to those found in legumes.

Aside from protein, oat milk is said to contain 10 essential minerals and 15 vitamins. A single glass of oat milk can contain up to 35% Recommended Daily Allowance of calcium, making it a particularly good milk substitute. It is also a low fat and cholesterol free alternative to milk.

Rice Milk

Rice milk is generally thinner in consistency than nut milks or soymilk, and it has a lighter, sweeter flavor that is perfect for using with cereal or in coffee. While rice milk works well in baking recipes, for using in dairy-free sauce recipes it generally requires some sort of binding or stabilizing agent such as agar flakes, eggs, flour or xanthan gum.

Rice milk contains more carbo...hydrates than cow's milk. However, unlike cow's milk, rice milk doesn't contain lactose or cholesterol. This makes it healthy for your heart as well as safe for those who are lactose intolerant.

Rice milk doesn't contain as much calcium or protein as cow's milk. Since rice milk doesn't contain a lot of protein, those who use rice milk as a milk substitute must plan to include more protein in their diet through other means. Most commercial brands of rice milk, however, are fortified with calcium. This is why a serving of fortified rice milk provides the same amount of calcium as a serving of cow's milk. Rice milk is also often fortified with niacin, vitamin B12, vitamin A, vitamin D and iron.


Almond Milk

Once referred to as amygdalate, almond milk used to be a common ingredient in medieval Europe and the Middle East. It is now slowly regaining popularity as an alternative to milk. An extract of protein-rich almonds, almond milk is slightly beige in color, with a nutty taste and creamy texture. You can make your own milk from fresh almonds or buy a prepackaged, processed product from health-food shops and some supermarkets. It comes in flavors such as plain, vanilla and chocolate. Drink almond milk straight or add to coffee, tea or hot chocolate. You can also add it to smoothies, non-dairy ice-cream or savory dishes.

Coconut Milk

Prepared from fresh coconut meat, coconut milk is a great option for richer dairy-free dishes. Although it is high in fat and saturated fat, coconut milk is a delicious way to add creaminess to any number of dairy-free and vegan dishes, from curries to pasta sauces to puddings to dairy-free whipped cream.

Coconut milk contains many vitamins, minerals and electrolytes, including potassium, calcium and chloride.

The saturated fat in coconut is made up of short-chain and medium-chain fatty acids the body quickly turns into energy instead of storing as fat. Therefore, even though it's high in saturated fat, coconut can aid in weight loss. Half the medium-chain fatty acids in coconut milk are composed of lauric acid, which is anti-viral, anti-bacterial, anti-microbial and anti-fungal. Coconut milk can help boost the immune system.
Coconut milk is known to relieve the symptoms of sore throats and ulcers and is used in skin-care products to moisturize the skin and relieve dry skin and rashes. It also can be used on the hair and in baths.
